Go with Sound Blasters X-fi. The sound quality out of this card is fantastic and it has minimal impact on system resources. All of my clients are overjoyed with the sound quality and it also comes with a nice software suite for customizing your sound quality. It is a very professional product that makes my picky (rightfully so) clients ecstatic.

You can not get 5.1 channel surround sound from a single analog stereo headphone output. If your on-board sound card has three separate jacks for front, center/sub, and rear channels (usually colored orange, black and dark green), then you can get a surround sound headset like the Turtle Beach HPA2:

This setup graphic should help give you a good visual:
http://www.turtlebeach.com/Portals/0/Products/PC/HPA2/tabs_html/images/howdoesitwork_main_01.jpg

As an alternative, you could technically opt for a 5.1/7.1 "virtualized" surround sound setup using the Turtle Beach DSS surround sound processor:
http://www.turtlebeach.com/products/audio-processors/ear-force-dss.aspx

The DSS will provide Dolby Pro Logic IIx virtual surround sound in ANY stereo headset. Turtle Beach has several headsets that you can pair with the DSS, such as the Z2, X11 and PX21. Any of these would give you killer audio.

Your ears aren't large enough to distinguish separation from front and rear in a headphone. As long as all sounds are fed to headphone jack you will hear them .

Surround sound headsets are a joke.....

In order for "surround sound" to work you need to be able to hear out of both ears and your brain puts the sound in a relational space. It would be like selling 3D TVs to people with only 1 working eye.

Best suggestion is to get a good comfortable pair of headphones, the games and your soundcard will do the rest.
